  • 6 cups peeled, cored, and sliced apples (about 4-5 large; mix of Granny Smith and Honeycrisp)
  • 1/3 cup packed light brown sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon pure vanilla extract
  • For the Oat Topping:
  • 3/4 cup all-purpose flour
  • 3/4 cup old-fashioned rolled oats
  • 2/3 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small cubes
  • 3/4 cup dark chocolate chips or chunks

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch square or similar 2-quart baking dish.
  2. Make the filling: In a large bowl, toss the sliced apples with 1/3 cup brown sugar, 1 tbsp flour, 1 tsp cinnamon, nutmeg, lemon juice, and vanilla until evenly coated. Pour into the prepared dish.
  3. Make the topping: In a medium bowl, whisk together 3/4 cup flour, oats, 2/3 cup brown sugar, 1/2 tsp cinnamon, and salt. Add the cold, cubed butter. Use a pastry cutter, fork, or fingertips to work the butter in until the mixture resembles coarse crumbs with some pea-sized bits. Gently fold in the chocolate chips.
  4. Assemble: Sprinkle the oat topping evenly over the apples. Do not press down.
  5. Bake: Place the dish on a baking sheet (to catch drips) and bake for 38-42 minutes, until the topping is golden brown and the filling is bubbling at the edges.
  6. Rest: Let the crisp cool for at least 15-20 minutes before serving to allow the juices to thicken.

Notes

For best results, use cold butter and firm baking apples. The crisp can be made ahead: prepare the filling and topping separately, refrigerate, then assemble and bake when ready. Serve with vanilla ice cream or whipped cream.
