  • 2/3 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon fine sea salt
  • 3 cups whole milk
  • 3 large egg yolks
  • 2 tablespoons unsalted butter, cut into pieces
  • 2 teaspoons pure vanilla extract
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
  • 1 tablespoon granulated sugar (optional, for macerating berries)
  • 1 cup crushed vanilla wafer cookies, shortbread cookies, or graham crackers
  • Whipped cream, for serving
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually whisk in the milk until smooth.
  2. Place the saucepan over medium heat. Cook, whisking constantly, until the mixture thickens and bubbles, about 5-7 minutes. Let it bubble for 1 full minute more, whisking constantly.
  3. In a separate bowl, whisk the egg yolks. Slowly drizzle about 1/2 cup of the hot milk mixture into the yolks while whisking vigorously to temper them.
  4. Slowly whisk the tempered yolk mixture back into the saucepan. Return to medium heat and cook, stirring constantly, for 2-3 minutes until very thick.
  5. Remove from heat. Stir in the butter and vanilla extract until fully incorporated.
  6. Pour the pudding into a bowl. Press a piece of plastic wrap directly onto the surface. Refrigerate for at least 2 hours, until cold and set.
  7. While the pudding chills, prepare the berries. If desired, toss them with 1 tablespoon of sugar and let sit for 15-20 minutes.
  8. To assemble, layer crushed cookies, chilled pudding, and berries in clear glasses or bowls. Repeat the layers.
  9. Top each parfait with whipped cream, a few extra berries, and a mint leaf if using. Serve immediately.

Notes

For best texture, assemble parfaits just before serving to keep the cookie layer crunchy. The pudding can be made up to 2 days ahead. Store components separately in the fridge. For a dairy-free version, use full-fat canned coconut milk.
