A festive and fizzy mocktail perfect for Valentine’s Day or any celebration. Lightly sweet with a vibrant berry flavor, it’s a beautiful drink everyone can enjoy. Simple to make yet feels impressively fancy.

Ingredients

  • 1 cup frozen mixed berries (raspberries, strawberries, blackberries)
  • 1/4 cup water
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon fresh lemon juice
  • Chilled sparkling water or club soda
  • Fresh berries and mint sprigs for garnish

Instructions

  1. In a small saucepan, combine the frozen berries, water, and honey or maple syrup. Heat over medium, stirring occasionally, until the berries break down and the mixture becomes syrupy, about 5 minutes.
  2. Remove from heat and stir in the fresh lemon juice. Let the syrup cool slightly, then strain through a fine-mesh sieve if you prefer a seedless drink. You can chill this base syrup in the refrigerator until ready to use.
  3. Chill your serving glasses in the freezer for 5-10 minutes before assembling.
  4. To build each drink, pour half of the berry syrup into the bottom of a chilled glass.
  5. Gently top with chilled sparkling water or club soda, pouring slowly down the side of the glass to preserve the fizz.
  6. Stir very gently once to combine.
  7. Garnish with fresh berries and a sprig of mint. Serve immediately.

Notes

For a vegan version, use maple syrup. The berry syrup base can be made up to 5 days ahead and stored in the refrigerator. Assemble the drink just before serving to keep it fizzy.
