Ingredients

Scale
  • 1 (32 oz) bag frozen tater tots
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/3 cup water
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup pico de gallo or diced tomatoes
  • 1/2 cup sliced black olives
  • 1/4 cup sliced pickled jalapeños
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced

Instructions

  1. Preheat oven to 425°F. Arrange frozen tater tots in a single layer on a large rimmed baking sheet. Drizzle with olive oil and toss. Bake for 20-25 minutes, flipping halfway, until deeply golden and crispy.
  2. While tots bake, cook ground beef in a skillet over medium-high heat until no pink remains. Drain grease. Stir in taco seasoning and water. Simmer for 3-5 minutes until liquid is absorbed. Set aside.
  3. Remove tots from oven. Reduce oven temperature to 375°F. Scatter seasoned beef evenly over the hot tots. Sprinkle both cheeses over everything.
  4. Return pan to oven for 8-10 minutes, until cheese is fully melted and bubbly.
  5. Remove from oven and immediately top with pico de gallo, olives, jalapeños, dollops of sour cream, diced avocado, and fresh cilantro. Serve immediately.

Notes

For crisp tots, do not overcrowd the pan. Add cold toppings only after baking. For a lighter version, use ground turkey, sweet potato tots, or Greek yogurt instead of sour cream.
