A quick, healthy, and flavorful meal that comes together in under 30 minutes. Savory ground turkey filling with crisp vegetables is served in fresh lettuce cups for a light yet satisfying dinner perfect for busy nights.

  • 1 lb lean ground turkey
  • 1 tablespoon avocado oil or olive oil
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, finely diced
  • 1 (8 oz) can water chestnuts, drained and finely chopped
  • 3 green onions, thinly sliced (white and green parts separated)
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 1-2 teaspoons sriracha or chili garlic sauce
  • 1-2 heads butter lettuce, Boston, or romaine hearts, leaves separated
  • Toppings: extra green onions, chopped cilantro, toasted sesame seeds, lime wedges

Instructions

  1. Prep lettuce leaves by washing and patting them completely dry with a clean towel. Set aside on a platter.
  2. In a small bowl, mix soy sauce, hoisin sauce, rice vinegar, oyster sauce (if using), and sriracha to make the sauce.
  3. Heat oil in a large skillet or wok over medium-high heat. Add diced onion and cook for 2-3 minutes until softened.
  4. Add minced garlic and grated ginger to the skillet. Cook for 60 seconds until fragrant.
  5. Add ground turkey to the skillet. Break it up with a wooden spoon and cook for 5-7 minutes until no longer pink.
  6. Stir in diced bell pepper, chopped water chestnuts, and the white parts of the green onions. Cook for 2-3 minutes.
  7. Pour the prepared sauce over the turkey mixture. Stir to combine and simmer for 2-3 minutes until slightly thickened.
  8. Remove skillet from heat. Stir in the green parts of the green onions and the sesame oil.
  9. Spoon the warm filling into the prepared lettuce cups. Garnish with desired toppings and serve immediately.

Notes

For crisp lettuce, ensure leaves are thoroughly dried after washing. Store leftover filling separately from lettuce. Filling can be frozen for up to 3 months. For a gluten-free version, use tamari and coconut aminos.
