  • 1/4 cup finely grated onion
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/3 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon pickle relish
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon smoked paprika
  • Pinch of salt and pepper
  • 1 head butter lettuce, leaves separated
  • Sliced tomato
  • Sliced red onion
  • Pickle chips

Instructions

  1. Make the creamy burger sauce by whisking mayonnaise, ketchup, pickle relish, mustard, 1/2 tsp smoked paprika, and a pinch of salt and pepper in a small bowl. Refrigerate.
  2. Grate the onion on a box grater to create a juicy pulp.
  3. In a medium bowl, gently combine ground turkey, grated onion, minced garlic, Worcestershire sauce, 1 tsp smoked paprika, garlic powder, onion powder, oregano, 1/2 tsp salt, and 1/4 tsp pepper. Mix just until combined; do not overwork.
  4. Divide mixture into 4 portions. Gently shape into oval patties about 1/2 inch thick. Make a slight indentation in the center of each with your thumb.
  5. Heat olive oil in a large skillet over medium heat. Add patties and cook for 5-7 minutes per side, or until internal temperature reaches 165°F.
  6. Let patties rest for 3-5 minutes.
  7. Assemble wraps by placing a warm patty on a lettuce leaf. Top with tomato, red onion, pickle chips, and a drizzle of the creamy sauce. Fold and eat.

Notes

For juiciest burgers, do not overmix the meat and let patties rest after cooking. Use sturdy lettuce leaves like butter or romaine. Patties can be cooked ahead and refrigerated for up to 4 days or frozen for 3 months. Reheat in a skillet with a splash of water.
