  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 2 stalks celery, finely diced
  • 3 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 3 cups whole milk, warmed
  • 1 cup chicken or vegetable broth
  • 1 cup frozen peas
  • 2 (5-ounce) cans solid white albacore tuna in water, drained well
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika, plus more for topping
  • Salt and freshly ground black pepper, to taste
  • 1 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C). Cook egg noodles in salted boiling water until al dente. Drain and set aside.
  2. In a large Dutch oven or deep skillet, melt 4 tbsp butter over medium heat. Add onion and celery; cook until soft, 5-7 minutes. Add garlic; cook 30 seconds.
  3. Sprinkle flour over vegetables and stir constantly for 2 minutes to make a roux.
  4. Slowly whisk in the warmed milk until incorporated, then whisk in the broth. Bring to a gentle simmer, stirring often, until thickened, about 5 minutes.
  5. Remove pot from heat. Stir in peas, tuna, cheddar, Parmesan, thyme, and paprika. Season generously with salt and pepper. Gently fold in the cooked noodles.
  6. Transfer mixture to a 9×13 inch baking dish. In a small bowl, mix panko with 2 tbsp melted butter and parsley. Sprinkle evenly over casserole. Dust with extra paprika.
  7. Bake for 20-25 minutes, until topping is golden and sauce is bubbling. Let rest 5-10 minutes before serving.

Notes

For a gluten-free version, use GF pasta, flour, and breadcrumbs. Ensure tuna is well-drained to prevent a watery sauce. Letting the casserole rest after baking is crucial for the sauce to set properly. Leftovers can be refrigerated for 3-4 days or frozen for up to 2 months.
