A quick, layered parfait with creamy vanilla yogurt, fresh blueberries, and crunchy granola. The secret is adding the granola just before serving to keep it perfectly crisp. It’s a healthy, fun snack or dessert inspired by Dr. Seuss.

Ingredients

  • 2 cups plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons pure maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups fresh blueberries, divided
  • 1 cup granola
  • Optional garnish: extra blueberries, mint sprig, or cinnamon

Instructions

  1. In a medium bowl, whisk together the Greek yogurt, maple syrup (or honey), and vanilla extract until smooth and creamy. Taste and adjust sweetness if desired.
  2. Place 1/2 cup of the blueberries in a small bowl. Mash them gently with a fork until juicy but not pureed.
  3. In serving glasses, start layering: add a spoonful of the sweetened yogurt, then a layer of whole blueberries, then a layer of mashed blueberries.
  4. Repeat the layers until the glasses are nearly full, ending with a yogurt layer.
  5. Just before serving, top each parfait with a generous sprinkle of granola to maintain its crunch. Garnish as desired.

Notes

For best results, use thick Greek yogurt. Assemble the yogurt and berry layers ahead, but only add the granola right before eating to prevent sogginess. For a gluten-free version, use certified gluten-free granola.
