This family-friendly casserole turns a regular weekend into a small celebration. It features a golden, crispy tater tot top giving way to a soft, savory center packed with sausage, eggs, and cheese. It is comfort food made easy, perfect for a lazy Saturday morning.

  • 1 (32 oz) bag frozen tater tots
  • 1 pound breakfast sausage, cooked and crumbled
  • 8 large eggs
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup diced yellow onion
  • 1/2 cup diced bell pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional garnish: chopped fresh chives or parsley

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Arrange half of the frozen tater tots in a single layer on the bottom of the dish.
  3. Evenly sprinkle the cooked sausage, diced onion, and bell pepper over the tater tots.
  4. Scatter the cheddar and mozzarella cheeses over the sausage and vegetables.
  5. In a large bowl, whisk the eggs, milk, garlic powder, smoked paprika, salt, and pepper until smooth.
  6. Slowly and evenly pour the egg mixture over the layers in the baking dish.
  7. Arrange the remaining tater tots on top in a single layer.
  8. Bake for 50 to 55 minutes, until the top is deep golden brown, the eggs are set, and a knife inserted comes out clean.
  9. Let the casserole rest for 5-10 minutes before slicing. Garnish with fresh herbs if desired.

Notes

Use tater tots straight from the freezer. The casserole can be assembled (except for the egg mixture) the night before. Let it rest after baking for cleaner slices.
