  • 1 (16.5 oz) roll refrigerated sugar cookie dough
  • 1 tablespoon all-purpose flour, for dusting
  • 1 (8 oz) block full-fat cream cheese, softened
  • 0.5 cup (1 stick) unsalted butter, softened
  • 1 teaspoon pure vanilla extract
  • 2 cups powdered sugar
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 kiwi, peeled and sliced
  • 0.5 cup mandarin orange segments, drained
  • 0.25 cup apricot preserves or apple jelly

Instructions

  1. Preheat oven to 350°F. Lightly flour a piece of parchment paper. Press or roll the cookie dough into a 12-inch circle, about 1/4-inch thick, on the parchment. Transfer parchment and dough to a baking sheet.
  2. Bake for 10-12 minutes, until edges are just golden. Let the crust cool completely on the pan.
  3. While crust cools, make the frosting. In a large bowl, beat the softened cream cheese and butter with a mixer until smooth and creamy, about 2 minutes.
  4. Beat in the vanilla extract. Gradually add the powdered sugar, beating on low until incorporated, then on high until light and fluffy.
  5. Once the crust is completely cool, spread the cream cheese frosting evenly over the top, leaving a small border.
  6. Arrange the sliced strawberries, blueberries, kiwi, and mandarin oranges in a decorative pattern over the frosting.
  7. Heat the apricot preserves in a microwave-safe bowl for 15-20 seconds until melted. Brush gently over the arranged fruit.
  8. Refrigerate the assembled pizza for at least 1 hour before slicing and serving.

Notes

Ensure the cookie crust is completely cool before adding frosting to prevent melting. Let cream cheese and butter soften fully for a smooth frosting. Pat fruit dry after washing to avoid a soggy crust. For clean slices, use a sharp knife and serve chilled.
