These colorful, poppable bites are the ultimate shortcut dessert. Using pre-made dough and a simple two-ingredient frosting, they come together in minutes but look impressively homemade. Perfect for parties, snacks, or any time you need a burst of sweet, fruity joy.

  • 1 (16.5 oz) package refrigerated sugar cookie dough
  • 8 oz block cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon fresh lemon zest
  • 1/4 teaspoon almond extract (optional)
  • 2-3 cups assorted fresh fruit (strawberries, blueberries, kiwi, raspberries, etc.)
  • 1/4 cup apricot jam or apple jelly

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Slice the cookie dough into 18-20 even rounds. Place on the prepared sheet, spacing 2 inches apart.
  3. Bake for 10-12 minutes, until edges are lightly golden. Let cookies cool completely on the sheet.
  4. While cookies cool, make the glaze. In a medium bowl, beat the softened cream cheese until smooth.
  5. Add powdered sugar, vanilla, lemon zest, and almond extract (if using). Beat until light and fluffy.
  6. Once cookies are cool, spread or pipe the cream cheese glaze onto each one.
  7. Arrange washed and dried fruit pieces on top of the glaze.
  8. Warm the apricot jam in the microwave for 15-20 seconds until liquefied. Gently brush a thin layer over the fruit for a glossy finish.
  9. Serve immediately or refrigerate until ready to serve.

Notes

Ensure cookies are completely cool before adding the glaze to prevent melting. Dry fruit thoroughly after washing to avoid a soggy cookie base. For make-ahead, store baked cookie bases and glaze separately, then assemble just before serving.
