  • 1 pound bulk breakfast sausage
  • 1 1/2 cups dry stuffing mix, finely crushed
  • 1 cup shredded sharp cheddar cheese
  • 1/3 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon finely chopped fresh parsley
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine crushed stuffing mix, cheddar, Parmesan, parsley, onion powder, and pepper.
  3. In a small bowl, whisk together egg, milk, and melted butter.
  4. Pour wet mixture over dry ingredients. Add sausage.
  5. Use hands to mix thoroughly until fully combined.
  6. Scoop 1 tablespoon of mixture and roll into a 1-inch ball. Place on prepared sheet. Repeat.
  7. Bake for 20-25 minutes until golden brown and cooked through.
  8. Cool for 5 minutes before serving warm.

Notes

For make-ahead, form balls and refrigerate overnight or freeze. Bake from frozen, adding 5-10 minutes. Serve with gravy, cranberry sauce, or honey mustard for dipping.
