A vibrant and simple salad that celebrates spring. Sweet strawberries and earthy spinach are tossed with a tangy poppy seed dressing, salty feta, and crunchy pecans. It’s a quick, make-ahead meal that feels like a celebration on a plate.

  • 6 ounces fresh baby spinach, washed and dried
  • 1 pound fresh strawberries, hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup candied pecans
  • 1/4 small red onion, very thinly sliced
  • 1/3 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon poppy seeds
  • 1 teaspoon Dijon mustard
  • 1 small shallot, minced (about 1 tablespoon)
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper

Instructions

  1. Prepare all salad components. Wash and thoroughly dry the spinach using a salad spinner or clean towels. Hull and slice the strawberries. Thinly slice the red onion. Crumble the feta cheese.
  2. Make the dressing. In a small bowl or jar with a lid, combine the olive oil, apple cider vinegar, honey, poppy seeds, Dijon mustard, minced shallot, salt, and pepper. Whisk or shake vigorously until well emulsified.
  3. Assemble the salad. In a large bowl, place the dried spinach. Scatter most of the strawberries, feta, and red onion over the top. Drizzle with about two-thirds of the dressing.
  4. Toss gently. Using salad tongs or two large spoons, gently toss the salad from the bottom to coat the leaves evenly, being careful not to crush the berries.
  5. Finish and serve. Transfer the salad to a serving platter or individual plates. Top with the remaining strawberries, feta, and all of the candied pecans. Serve immediately with extra dressing on the side.

Notes

For best results, dress the salad just before serving to prevent soggy greens. All components can be prepped 1-2 days ahead and stored separately. For a vegan version, use maple syrup instead of honey and omit the cheese or use a vegan alternative.
