A no-bake dessert featuring a crunchy chocolate cookie crust, a light and creamy chocolate silk filling, and a sweet fresh strawberry topping. It is a perfect combination of decadent and fresh flavors, ideal for family celebrations or a simple treat.

  • 1 1/2 cups chocolate cookie crumbs (from about 24 Oreos, filling removed)
  • 6 tablespoons unsalted butter, melted
  • 1 pinch salt
  • 1 cup semi-sweet chocolate chips
  • 8 ounces full-fat cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups heavy whipping cream, cold
  • 1 pound fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon lemon juice

Instructions

  1. Make the crust: Mix cookie crumbs, melted butter, and salt. Press firmly into a 9-inch pie plate. Freeze for 15 minutes.
  2. Make chocolate filling: Melt chocolate chips and let cool slightly. Beat cream cheese until smooth. Beat in powdered sugar and vanilla. Beat in melted chocolate until uniform.
  3. Whip the heavy cream to stiff peaks. Gently fold one-third into chocolate mixture, then fold in the rest until no streaks remain. Spoon into chilled crust and smooth top. Refrigerate.
  4. Make strawberry topping: In a saucepan, combine strawberries, sugar, cornstarch, water, and lemon juice. Cook over medium heat for 5-7 minutes, stirring, until thickened. Let cool completely.
  5. Assemble: Spread cooled strawberry topping over the set chocolate layer. Cover and refrigerate for at least 4 hours, or overnight, until firm.

Notes

Ensure cream cheese is fully softened and strawberry topping is completely cool before assembling to prevent a runny pie. For clean slices, chill thoroughly.
