A vibrant and satisfying salad featuring juicy balsamic-marinated chicken, fresh strawberries, and a rich balsamic glaze. This meal is a perfect balance of lean protein and sweet, tangy flavors, ideal for a healthy and special-feeling lunch or dinner.

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic, minced
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon dried thyme (or 1 tsp fresh)
  • Salt and black pepper
  • 1/2 cup balsamic vinegar
  • 1 tablespoon honey
  • 6 cups mixed greens (spinach and arugula blend)
  • 1 pint fresh strawberries, hulled and sliced
  • 1/2 cup crumbled goat cheese or feta
  • 1/4 cup sliced almonds or pecans, toasted
  • 1/4 small red onion, thinly sliced

Instructions

  1. Marinate the chicken. In a shallow dish, whisk together 2 tbsp olive oil, 2 tbsp balsamic vinegar, garlic, 1 tsp honey, thyme, salt, and pepper. Add chicken, turn to coat, and let sit for 15-20 minutes.
  2. Make the balsamic glaze. Combine 1/2 cup balsamic vinegar and 1 tbsp honey in a small saucepan. Simmer over medium heat, then reduce to low. Let bubble gently for 8-10 minutes until reduced by half and syrupy. Set aside.
  3. Cook the chicken. Heat a grill pan or skillet over medium-high heat. Cook chicken for 6-8 minutes per side until cooked through. Transfer to a cutting board and let rest for 5 minutes before slicing.
  4. Assemble the salad. In a large bowl or on plates, arrange mixed greens. Top with sliced strawberries, red onion, crumbled cheese, and toasted nuts.
  5. Finish and serve. Slice the rested chicken and arrange over the salad. Drizzle generously with the warm balsamic glaze. Toss gently and serve immediately.

Notes

Let the chicken rest before slicing to keep it juicy. Watch the glaze closely to prevent over-reduction. Store components separately for best leftovers. For a shortcut, use leftover or rotisserie chicken.
