  • 16 ounces frozen sweet peas, thawed
  • 1/2 cup finely chopped red onion
  • 1/3 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons fresh lemon juice
  • 1/4 cup fresh mint leaves, finely chopped
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 slices cooked bacon, crumbled (optional)
  • 1/2 cup shredded sharp cheddar cheese

Instructions

  1. In a large bowl, combine the thawed peas and chopped red onion.
  2. In a small bowl, whisk together mayonnaise, sour cream, lemon juice, chopped mint, salt, and pepper until smooth.
  3. Pour the dressing over the pea mixture and gently fold until evenly coated.
  4. Cover and refrigerate the salad for at least 30 minutes to allow flavors to blend.
  5. Just before serving, gently fold in the crumbled bacon and shredded cheddar cheese.
  6. Transfer to a serving bowl and enjoy immediately.

Notes

For a lighter version, substitute mayo and sour cream with Greek yogurt. Soak chopped onion in cold water for 10 minutes to mellow its bite. Do not use dried mint. Add bacon and cheese at the end to maintain texture. Salad can be made (without bacon/cheese) up to 24 hours ahead.
