  • 2 cups cooked chicken, shredded
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained

  • 4 ounces Velveeta, cubed
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1 cup shredded cheddar cheese (for topping)
  • 1/4 cup grated Parmesan cheese (for topping)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F. Cook the spaghetti according to package directions until al dente. Drain well.
  2. In a large mixing bowl, combine the cream of chicken soup, undrained diced tomatoes and green chilies, sour cream, chicken broth, garlic powder, onion powder, and cayenne pepper. Stir until smooth and well-combined.
  3. Add the cooked spaghetti, shredded chicken, 1 cup of cheddar cheese, and cubed Velveeta to the sauce. Gently fold everything together until evenly coated.
  4. Transfer the mixture to a greased 9×13 inch baking dish. Spread into an even layer.
  5. Sprinkle the remaining 1 cup of cheddar cheese and Parmesan cheese evenly over the top.
  6. Bake for 25-30 minutes, or until cheese is melted and casserole is bubbly around the edges. For a golden top, broil for the last 1-2 minutes, watching carefully.
  7. Let the casserole rest for about 5 minutes before serving. Garnish with fresh parsley if desired.
