  • 1 pound boneless, skinless chicken breasts or thighs
  • 8 ounces spaghetti, broken in half
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel), undrained
  • 1 (8 oz) block cream cheese, softened and cubed
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup chicken broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 to 1/2 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • Fresh parsley or green onions, chopped for garnish

Instructions

  1. Cook chicken until done, then shred. Cook spaghetti in salted water until al dente, drain, and set aside.
  2. Preheat oven to 350°F. Grease a 9×13 inch baking dish.
  3. In a large Dutch oven or deep skillet, melt butter over medium heat. Add onion, bell pepper, and celery. Sauté for 6-8 minutes until softened. Add garlic and cook for 1 minute more.
  4. Reduce heat to medium-low. Add cream of chicken soup, diced tomatoes with chilies, cream cheese, 1 cup cheddar cheese, chicken broth, smoked paprika, garlic powder, onion powder, and cayenne. Stir until cream cheese melts and sauce is smooth. Season with salt and black pepper.
  5. Add shredded chicken and drained spaghetti to the sauce. Gently fold together until well combined.
  6. Transfer mixture to the prepared baking dish. Sprinkle remaining 1 cup cheddar cheese evenly on top.
  7. Bake for 20-25 minutes until cheese is melted and bubbly. For a browner top, broil for 1-2 minutes, watching closely.
  8. Let casserole rest for 5-10 minutes before serving. Garnish with fresh parsley or green onions.

Notes

Use rotisserie chicken for a shortcut. Ensure pasta is al dente as it softens while baking. Adjust cayenne to control spice level. Casserole can be assembled ahead and refrigerated or frozen before baking.
