These soft chocolate chip cookie bars are the ultimate easy dessert. They bake up chewy and fudgy in one pan, and taste even better the next day, making them perfect for snacks and sharing.

  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch metal baking pan with parchment paper, leaving an overhang on two sides.
  2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar with a mixer on medium speed for 2-3 minutes, until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. With the mixer on low, gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Use a spatula to fold in the chocolate chips until evenly distributed.
  7. Press the dough evenly into the prepared pan with damp hands or a measuring cup.
  8. Bake for 25-30 minutes, until the top is golden and the center is just set.
  9. Let the pan cool completely on a wire rack for at least 1 hour before lifting out and slicing into bars.

Notes

For best results, use room temperature ingredients and do not overmix the dough after adding flour. The bars will continue to set as they cool. Store in an airtight container at room temperature for up to 5 days.
