Crispy smashed chicken meets creamy Caesar dressing in a quick taco mashup. This recipe uses a simple pan-smashing technique for maximum flavor in under 30 minutes. A perfect weeknight dinner that feels special.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch chunks
  • 2 tbsp olive oil, divided
  • 1 tbsp taco seasoning
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika
  • Kosher salt and black pepper
  • 0.5 cup mayonnaise
  • 0.25 cup freshly grated Parmesan cheese, plus more for serving
  • 2 tbsp fresh lemon juice
  • 2 tsp Dijon mustard
  • 2 cloves garlic, minced
  • 3 anchovy fillets, minced, or 1 tsp anchovy paste
  • 8 small flour or corn tortillas, warmed
  • 2 cups chopped romaine lettuce

Instructions

  1. Season chicken chunks with 1 tbsp olive oil, taco seasoning, garlic powder, smoked paprika, salt, and pepper. Let sit for 5-10 minutes.
  2. Make dressing by whisking mayonnaise, Parmesan, lemon juice, Dijon, minced garlic, and anchovies until smooth. Set aside.
  3. Heat a large skillet over medium-high heat. Add remaining 1 tbsp oil.
  4. Working in batches, add chicken to hot pan. Firmly press each piece flat with a spatula or pot bottom to smash.
  5. Cook smashed chicken undisturbed for 3-4 minutes until a deep golden crust forms.
  6. Flip chicken and cook for another 2-3 minutes until cooked through and crispy. Transfer to a plate and repeat.
  7. Assemble tacos by spreading dressing on warm tortillas. Top with lettuce, crispy chicken, and extra Parmesan. Serve immediately.

Notes

Do not crowd the pan; cook in batches for best crust. A firm smash is key for flavor. Warm tortillas prevent sogginess. For a lighter dressing, swap half the mayo with Greek yogurt.
