  • ½ cup honey
  • ⅓ cup low-sodium soy sauce
  • ¼ cup chicken broth
  • 6 cloves garlic, minced
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water
  • Sliced green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. Pat pork tenderloins dry and season all over with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear pork for 2-3 minutes per side until golden brown (optional but recommended).
  3. In the slow cooker insert, whisk together honey, soy sauce, broth, garlic, ketchup, vinegar, ginger, and red pepper flakes.
  4. Place seared or raw pork into the slow cooker, turning to coat in the sauce.
  5. Cover and cook on LOW for 3-4 hours or HIGH for 1.5-2 hours, until internal temperature reaches 145°F.
  6. Transfer pork to a cutting board, tent with foil, and let rest for 10 minutes.
  7. Pour cooking liquid into a saucepan and bring to a simmer over medium heat.
  8. Whisk cornstarch and cold water into a slurry. Slowly whisk slurry into the simmering sauce and cook for 1-2 minutes until thickened.
  9. Slice pork into medallions, drizzle with thickened glaze, and garnish with green onions and sesame seeds.

Notes

Searing adds great flavor but can be skipped for a true dump-and-go meal. Do not overcook the lean pork; use a meat thermometer. Always make a cornstarch slurry with cold water to avoid lumps. Leftovers are excellent for tacos or fried rice.
