This recipe transforms simple beef stew meat into incredibly tender, flavorful bites through gentle slow cooking. The rich garlic butter sauce permeates the meat for a cozy, comforting meal that requires minimal hands-on effort.

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 1/2 cup (1 stick) unsalted butter
  • 8-10 garlic cloves, minced
  • 1/3 cup low-sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the beef cubes completely dry with paper towels. Season generously on all sides with salt and pepper.
  2. In a small saucepan over low heat, melt the butter. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it. Remove from heat.
  3. Stir the beef broth, Worcestershire sauce, brown sugar, thyme, onion powder, and smoked paprika into the garlic butter.
  4. Place the seasoned beef cubes into your slow cooker. Pour the garlic butter sauce evenly over the top. Gently stir to coat.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the beef is fork-tender.
  6. Stir the beef bites and sauce. Serve garnished with fresh chopped parsley.

Notes

For a thicker sauce, whisk 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the slow cooker during the last 30 minutes of cooking. For extra flavor, quickly sear the beef cubes in a hot skillet before adding to the slow cooker.
