  • 3 pounds boneless, skinless chicken breasts or thighs
  • 1 cup barbecue sauce
  • 1/2 cup low-sodium chicken broth or water
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper

Instructions

  1. Pat the chicken dry with paper towels and place it in the slow cooker.
  2. In a medium bowl, whisk together the barbecue sauce, broth, vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and black pepper.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover and cook on LOW for 4 to 6 hours, or on HIGH for 2 to 3 hours, until the chicken shreds easily with two forks.
  5. Shred the chicken directly in the slow cooker using two forks and stir it into the sauce. Let it sit for 10-15 minutes on the WARM setting before serving.

Notes

For a caramelized finish, transfer the shredded chicken to a baking sheet, spoon extra sauce over it, and broil for 3-5 minutes. Chicken thighs yield a richer, more tender result than breasts. Taste and adjust seasoning with salt or a squeeze of lime juice after shredding.
