Tender, juicy steak cubes are quickly seared and bathed in a rich, aromatic garlic butter sauce. This recipe delivers maximum comfort with minimal effort, perfect for a fast, impressive weeknight dinner.

  • 1 ½ pounds sirloin steak, cut into 1-inch cubes
  • 2 tablespoons olive oil, divided
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 4 tablespoons unsalted butter
  • 6-8 garlic cloves, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme leaves
  • Optional: squeeze of fresh lemon juice or splash of Worcestershire sauce

Instructions

  1. Pat steak cubes dry with paper towels. Toss in a bowl with 1 tablespoon olive oil, salt, pepper, and smoked paprika. Let sit for 5 minutes.
  2. Heat a large cast-iron or heavy skillet over medium-high heat until very hot. Add remaining 1 tablespoon olive oil.
  3. Add steak bites in a single layer, working in batches if needed to avoid crowding. Sear undisturbed for 2-3 minutes to develop a crust. Flip and cook another 1-2 minutes until browned but medium-rare. Transfer to a plate.
  4. Reduce heat to medium-low. Add butter to the same skillet. Once melted, add minced garlic and thyme. Cook, stirring constantly, for 60-90 seconds until fragrant and just golden.
  5. Return steak bites and any juices to the skillet with the garlic butter. Toss for about 1 minute to warm through and coat in sauce.
  6. Remove from heat. Stir in fresh parsley and optional lemon juice or Worcestershire sauce. Toss to combine and serve immediately.

Notes

For best results, ensure steak is dry before seasoning and do not overcrowd the pan during searing. Watch garlic closely to prevent burning. Leftovers reheat best in a skillet over medium-low heat.
