  • 1 (30 oz) bag frozen shredded hash browns, thawed
  • 12 large eggs
  • 1 cup whole milk
  • 1 lb bacon, cooked until crisp and crumbled
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 3 green onions, thinly sliced (white and green parts separated)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • Cooking spray or butter for greasing

Instructions

  1. Preheat oven to 375°F (190°C). Generously grease a 9×13 inch baking dish.
  2. In a large bowl, combine the thawed hash browns, crumbled bacon (reserve a small handful for topping if desired), 1 1/2 cups cheddar cheese, Monterey Jack cheese, diced yellow onion, red bell pepper, and the white parts of the green onions. Mix well.
  3. Transfer the hash brown mixture to the prepared baking dish and press into an even layer.
  4. In the same large bowl, whisk the eggs, milk, garlic powder, smoked paprika, black pepper, and salt until completely smooth and uniform.
  5. Pour the egg mixture evenly over the hash brown layer. Gently poke the hash browns with a fork in a few spots to help the egg seep down.
  6. Top with the remaining 1/2 cup cheddar cheese and reserved bacon bits.
  7. Bake for 55 to 65 minutes, until the edges are golden brown and puffed and the center is set. A knife inserted should come out clean. Tent with foil if the top browns too quickly.
  8. Let the casserole rest on a cooling rack for 10-15 minutes before slicing. Garnish with the green parts of the sliced green onions and serve.

Thaw hash browns completely to avoid a watery casserole. Letting the baked casserole rest is crucial for clean slices. For a make-ahead option, assemble, cover, and refrigerate overnight, then bake adding 5-10 minutes. Swap bacon for breakfast sausage for a delicious variation.
