This one-pan dinner delivers crispy, caramelized sausage and potatoes with roasted peppers and onions. It is a simple, deeply satisfying comfort food with minimal cleanup, perfect for a busy weeknight.

  • 1.5 pounds baby potatoes, halved or quartered
  • 1 pound smoked sausage or kielbasa, sliced into 1/2-inch rounds
  • 1 large bell pepper, any color, sliced
  • 1 medium yellow onion, sliced
  • 3 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt, plus more to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper or foil.
  2. In a large bowl, toss potatoes, bell pepper, and onion with olive oil, smoked paprika, garlic powder, oregano, onion powder, black pepper, and salt until evenly coated.
  3. Spread vegetables in a single layer on the prepared sheet pan. Roast for 20 minutes.
  4. Remove pan from oven. Add sliced sausage to the pan, nestling it among the vegetables. Gently stir to redistribute.
  5. Return pan to oven and roast for another 15-20 minutes, until potatoes are fork-tender and sausage is browned.
  6. Remove from oven, let rest a few minutes. Garnish with chopped parsley. Taste and add extra salt if needed.

Notes

Do not crowd the pan; use two pans if needed for a single layer. Adding the sausage after the first 20 minutes prevents it from overcooking. Recipe is easily customizable with different vegetables or sausage types.
