These festive no-bake treats are the perfect St. Patrick’s Day dessert. They come together quickly with a simple technique for a light, snappy texture. A hint of mint and vibrant green color make them magically fun.

  • 6 cups crispy rice cereal
  • 1 (10 oz) bag regular marshmallows (about 40-42)
  • 3 tablespoons unsalted butter
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon mint extract (optional)
  • Green gel food coloring
  • Non-stick cooking spray
  • Green sprinkles, white chocolate chips, or gold sugar pearls for decoration (optional)

Instructions

  1. Generously spray a 9×13 inch baking dish with non-stick cooking spray.
  2. In a large pot or Dutch oven, melt the butter over low heat.
  3. Add the entire bag of marshmallows. Stir constantly with a silicone spatula or wooden spoon until completely melted, smooth, and glossy (5-7 minutes). Keep heat low to avoid browning.
  4. Remove the pot from the heat. Immediately stir in the vanilla extract, mint extract (if using), and several drops of green gel food coloring until uniform.
  5. Quickly pour in the crispy rice cereal. Gently fold and stir until every piece is thoroughly coated.
  6. Transfer the mixture to the prepared baking dish. Lightly spray your hands with cooking spray and press the mixture firmly and evenly into the pan.
  7. If using, scatter decorations over the top and press gently to adhere.
  8. Let the treats sit at room temperature for at least 1 hour to set completely before cutting into squares.

Notes

For gluten free treats, use certified gluten-free crispy rice cereal. For best texture, melt marshmallows slowly over low heat and use fresh cereal. Store in an airtight container at room temperature for up to 3 days.
