This classic no-bake treat is the ultimate quick dessert. The secret to a perfect, clean bite is letting the marshmallow mixture cool slightly before adding the cereal, ensuring a light and crispy texture every time. Simple ingredients and warm memories come together in this easy recipe.

Ingredients

Scale
  • 6 cups crispy rice cereal (like Rice Krispies)
  • 1 (10-ounce) bag regular marshmallows (about 40 marshmallows)
  • 3 tablespoons unsalted butter
  • 1/4 teaspoon fine sea salt
  • 1 teaspoon pure vanilla extract (optional)

Instructions

  1. Generously grease a 9×13-inch baking dish with butter or line it with parchment paper.
  2. In a large pot or Dutch oven, melt the butter over low heat. Add the marshmallows and salt. Stir constantly until completely melted and smooth, about 5-7 minutes.
  3. Remove the pot from the heat. Stir in the vanilla extract, if using. Let the mixture sit off the heat for 60-90 seconds to thicken slightly.
  4. Add all the crispy rice cereal at once. Gently fold and stir until every piece is evenly coated.
  5. Quickly transfer the mixture to the prepared pan. Lightly grease your hands and press the mixture into an even layer. Do not over-compact.
  6. Let the pan sit at room temperature for at least 1 hour to set completely before cutting into squares.

Notes

The brief cool-down period for the marshmallow mixture is crucial for preventing soggy cereal. For best results, use low heat to melt the marshmallows and avoid over-pressing the mixture into the pan. Store in an airtight container at room temperature.
