  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1 medium yellow onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup corn kernels
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes with green chiles, undrained
  • 1 cup chicken or vegetable broth
  • 1 cup long-grain white rice, uncooked
  • Juice of 1 lime
  • For serving: shredded cheese, cilantro, avocado, sour cream, tortilla chips

Instructions

  1. Heat olive oil in a large, deep skillet over medium-high heat. Add ground turkey and cook until no longer pink, breaking it up with a spoon.
  2. Add diced onion and bell pepper. Cook until softened, about 5 minutes. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle taco seasoning over the mixture and stir to coat. Add corn, black beans, undrained tomatoes, broth, and uncooked rice. Stir to combine.
  4. Bring to a boil, then reduce heat to low. Cover tightly and simmer for 18-20 minutes. Do not lift the lid.
  5. Remove from heat. Squeeze lime juice over the top and fluff gently with a fork. Serve with desired toppings.

Notes

Do not peek while the rice cooks. The fresh lime juice is essential for the zesty finish. For a lower-carb option, substitute cauliflower rice added in the last 5 minutes. Leftovers store well for up to 4 days.
