  • 1.5 lbs pork tenderloin, cut into 1-inch cubes
  • 1 fresh pineapple, peeled, cored, and cut into 1-inch chunks
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
  • 1 cup BBQ sauce
  • 1/2 cup fresh pineapple juice
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon smoked paprika

Instructions

  1. Cut pork, pineapple, bell pepper, and onion into 1-inch pieces. Soak wooden skewers in water for 30 minutes if using.
  2. Make the glaze: In a small saucepan, whisk together BBQ sauce, pineapple juice, soy sauce, honey, garlic, ginger, and smoked paprika. Simmer over medium heat for 5-7 minutes until slightly thickened. Remove from heat and let cool slightly. Reserve about 1/3 cup for serving.
  3. Thread pork, pineapple, onion, and bell pepper onto skewers in an alternating pattern, leaving a little space between pieces.
  4. Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
  5. Place skewers on the grill. Cook for 4-5 minutes, then flip. Brush the cooked side with glaze. Cook for another 4-5 minutes, flip, and brush the other side. Continue cooking and flipping every minute, glazing each time, until pork is cooked through (internal temperature of 145°F) and edges are caramelized, about 10-12 minutes total.
  6. Serve immediately with reserved glaze.

Notes

Do not apply the glaze too early to prevent burning. For a shortcut, use canned pineapple chunks in 100% juice; pat them dry before skewering. Chicken, tofu, or mushrooms can be substituted for the pork.
