This easy fruit pizza is the ultimate no-fuss summer treat. A store-bought sugar cookie crust is topped with creamy frosting and fresh, vibrant fruit for a dessert that is as fun to assemble as it is to eat.

  • 1 (16.5 oz) tube Pillsbury refrigerated sugar cookie dough
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon pure vanilla extract
  • 2 cups powdered sugar
  • Assorted fresh berries and fruit (strawberries, blueberries, raspberries, kiwi, etc.)
  • 1/4 cup apricot jam or orange marmalade, warmed and strained (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Press the entire roll of cookie dough into a greased 12-inch pizza pan or a parchment-lined baking sheet, forming an even circle about 1/4-inch thick.
  2. Bake for 10-14 minutes, until edges are light golden. The center will look soft. Let the crust cool completely on the pan.
  3. While the crust cools, make the frosting. In a bowl, beat the softened cream cheese and butter with an electric mixer until smooth and fluffy, about 2 minutes.
  4. Beat in the vanilla extract. Gradually add the powdered sugar, mixing on low then increasing speed until thick and creamy.
  5. Once the crust is completely cool, spread the frosting over it in an even layer, leaving a small border.
  6. Arrange washed and thoroughly dried fruit on top of the frosting in your desired pattern.
  7. For an optional glossy finish, gently brush the warmed, strained jam over the arranged fruit.
  8. Slice with a pizza cutter and serve. For best results, assemble within a few hours of serving.

Notes

Ensure the cookie crust is completely cool before frosting to prevent melting. Pat fruit dry after washing to avoid a soggy crust. The pizza is best enjoyed the day it is made but can be refrigerated for 1-2 days.
