These no-bake treats combine sticky-sweet marshmallow, creamy peanut butter, and crispy cereal for pure, uncomplicated joy. They are a quick, fuss-free dessert perfect for snacks, bake sales, or a simple pick-me-up.

  • 6 cups crispy rice cereal
  • 1 (10 oz) bag mini marshmallows
  • 1/2 cup creamy peanut butter
  • 3 tablespoons unsalted butter
  • 1/4 teaspoon fine sea salt
  • 1 teaspoon pure vanilla extract

Instructions

  1. Grease an 8×8 or 9×9 inch baking dish with butter or non-stick spray. Set aside.
  2. In a large pot, melt the butter over low heat. Add the mini marshmallows and salt. Stir constantly until completely melted and smooth.
  3. Remove the pot from the heat. Immediately stir in the peanut butter and vanilla extract until fully combined.
  4. Add the crispy rice cereal. Gently fold and stir until every piece is thoroughly coated.
  5. Quickly transfer the mixture to the prepared pan. Use parchment paper or buttered hands to press into an even layer. Let cool at room temperature for at least 1 hour before cutting into squares.

Notes

Use fresh marshmallows and crisp cereal for best results. Do not overheat the marshmallows. Press the mixture lightly into the pan for a chewy texture, not dense. Store in an airtight container at room temperature for up to 2 days, in the fridge for up to a week, or freeze for up to 3 months.
