This easy peach cobbler uses canned peaches and pantry staples for a warm, comforting dessert that tastes like homemade love. Ready in under an hour, it features a buttery golden crust and jammy sweet peach filling.

  • 2 cans (15 ounces each) sliced peaches in heavy syrup, undrained
  • 1 cup all-purpose flour
  • 1 cup granulated sugar, divided
  • 1 cup milk (whole or 2% works best)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat oven to 375 degrees Fahrenheit. Place melted butter in a 9×13 inch baking dish or 10-inch cast iron skillet. Swirl to coat bottom evenly.
  2. In a medium bowl, whisk together flour, 3/4 cup sugar, baking powder, and salt. Add milk and vanilla extract, stir until just combined (batter will be thin).
  3. Pour batter gently over melted butter in baking dish. Do not stir.
  4. Drain half the syrup from one can of peaches. In a small bowl, mix both cans of peaches with remaining syrup, remaining 1/4 cup sugar, cinnamon, and nutmeg. Spoon peaches and syrup evenly over batter. Do not stir.
  5. Bake for 35 to 40 minutes until top is golden brown and edges are bubbly. Center should be set but slightly jiggly. Cool for at least 10 minutes before serving.

Notes

Place a baking sheet on the rack below to catch drips. For a lighter version, use peaches in juice instead of syrup and reduce sugar by 1/4 cup. Dairy-free: swap butter for coconut oil and use oat milk. Gluten-free: use a 1:1 gluten-free baking flour blend. Let cobbler rest 10 minutes before serving to allow juices to thicken.
