These layered popsicles are a festive and refreshing summer treat. Made with real fruit and a creamy middle layer, they are perfect for holidays and hot days. They are easy to make ahead and fun for the whole family.

Ingredients

  • For the Red Layer (Strawberry):
  • 2 cups fresh or frozen strawberries, hulled
  • 1/4 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 2-3 tablespoons water, if needed for blending
  • For the White Layer (Creamy Coconut or Yogurt):
  • 1 (13.5 oz) can full-fat coconut milk, well-shaken OR 1 1/2 cups plain Greek yogurt
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • For the Blue Layer (Blueberry):
  • 2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 2-3 tablespoons water, if needed for blending

Instructions

  1. Prepare the fruit layers. In a blender, combine strawberries, sugar, and lemon juice for the red layer. Blend until smooth, adding water if needed. Pour into a pourable container. Rinse blender and repeat with blueberries for the blue layer.
  2. Make the white layer. In a bowl, whisk together coconut milk (or yogurt), honey, and vanilla until smooth.
  3. Layer and freeze. First, divide the strawberry puree among popsicle molds, filling each one-third full. Insert sticks. Freeze for 45-60 minutes until surface is firm.
  4. Pour the white layer over the set red layer, filling another third of the mold. Freeze again for 45-60 minutes until set.
  5. Top off molds with the blueberry puree. Cover with lids or foil to hold sticks upright. Freeze for at least 4-6 hours, or overnight.
  6. To unmold, run the outside of the mold under warm water for 10-15 seconds. Gently pull on the stick to release the popsicle. Serve immediately.

Notes

Patience between layers is key for clean stripes. For a sugar-free version, use a natural zero-calorie sweetener. Store fully frozen popsicles in an airtight container for up to 2 months.
