This Patriotic Fruit Salad is a stunning red white and blue dish that comes together in just 15 minutes with no cooking required. Juicy strawberries sweet blueberries and creamy banana slices are tossed in a light honey-lime dressing for a refreshing summer treat perfect for July Fourth celebrations.

Ingredients

  • 2 cups fresh strawberries hulled and sliced
  • 2 cups fresh blueberries
  • 2 cups fresh raspberries
  • 3 medium bananas sliced
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon poppy seeds (optional)
  • Fresh mint leaves for garnish

Instructions

  1. Wash all berries under cool running water and pat dry thoroughly with a clean towel or paper towels.
  2. Hull the strawberries and slice them into even pieces about a quarter-inch thick. Leave blueberries and raspberries whole.
  3. In a small bowl whisk together honey and fresh lime juice until smooth. Stir in poppy seeds if using.
  4. Place strawberries blueberries and raspberries in a large mixing bowl. Pour the dressing over the top and gently toss with a rubber spatula until every piece of fruit is lightly coated.
  5. Add sliced bananas last and fold them in carefully so they do not break apart.
  6. Transfer the salad to a serving bowl or platter and garnish with fresh mint leaves. Serve immediately.

Notes

For best results slice bananas just before assembling to prevent browning. If making ahead keep bananas separate and add just before serving. For a vegan option substitute maple syrup for honey. Use lemon juice instead of lime for a different citrus note.
