  • 1 loaf (16 oz) hearty bread like challah or brioche, cut into 1-inch cubes
  • 8 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup pure maple syrup, plus more for serving
  • 2 teaspoons pure vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon kosher salt
  • 1 cup fresh or frozen blueberries
  • 1/2 cup all-purpose flour (for streusel)
  • 1/2 cup packed light brown sugar (for streusel)
  • 1/2 teaspoon cinnamon (for streusel)
  • 1/4 teaspoon salt (for streusel)
  • 6 tablespoons cold unsalted butter, cubed (for streusel)

Instructions

  1. Generously butter a 9×13 inch baking dish. Place bread cubes evenly in dish. Sprinkle blueberries over bread.
  2. In a large bowl, whisk eggs until frothy. Whisk in milk, cream, granulated sugar, 1/4 cup maple syrup, vanilla, 1 1/2 tsp cinnamon, nutmeg, and 1/4 tsp salt until smooth.
  3. Pour custard evenly over bread. Gently press bread down to submerge. Cover tightly with plastic wrap and refrigerate for at least 8 hours or up to 12.
  4. When ready to bake, preheat oven to 350°F. For streusel, combine flour, brown sugar, 1/2 tsp cinnamon, and 1/4 tsp salt in a bowl. Cut in cold butter with fingers or pastry cutter until mixture resembles coarse crumbs.
  5. Remove baking dish from fridge. Discard plastic wrap. Sprinkle streusel topping evenly over soaked bread.
  6. Bake for 45 to 55 minutes, until top is golden brown, streusel is crisp, and center is set (a knife inserted should come out clean).
  7. Let bake cool for 10 to 15 minutes before serving. Drizzle with additional maple syrup.

Notes

Use stale, sturdy bread to avoid sogginess. Do not skip the minimum 8-hour soak. Let rest after baking for cleaner slices. For a dairy-free version, use almond milk and coconut cream. For gluten-free, use gluten-free bread and flour.
