Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (6 oz) can tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 (9 oz) package fresh cheese tortellini
  • 1 cup heavy cream or half-and-half
  • 2 cups fresh baby spinach
  • 1/2 cup freshly grated Parmesan cheese, plus more for serving
  • Fresh basil, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
  2. Stir in the tomato paste and cook for 1-2 minutes, stirring constantly.
  3. Pour in the crushed tomatoes and vegetable broth. Add the oregano, basil, red pepper flakes, salt, and pepper. Bring the mixture to a gentle simmer.
  4. Add the fresh cheese tortellini to the simmering soup. Cook for the time indicated on the tortellini package, usually 5-7 minutes.
  5. Reduce the heat to low. Stir in the heavy cream and fresh baby spinach until the spinach wilts.
  6. Stir in the grated Parmesan cheese until melted. Taste and adjust seasoning with more salt or pepper if needed.
  7. Ladle the soup into bowls. Top with extra Parmesan cheese and fresh basil. Serve immediately.

Notes

For a dairy-free version, use full-fat coconut milk instead of cream and omit the Parmesan or use a vegan alternative. The soup thickens as it sits; add a splash of broth or water when reheating leftovers. Do not add the dairy while the soup is at a rapid boil to prevent curdling.
