  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1 tiny pinch salt
  • 3 tablespoons milk
  • 2 tablespoons vegetable oil or melted butter
  • 1/4 teaspoon pure vanilla extract
  • 1-2 tablespoons chocolate chips (optional)

Instructions

  1. In a large microwave-safe mug, whisk together the flour, sugar, cocoa powder, baking powder, and salt with a fork until well combined.
  2. Pour in the milk, oil (or melted butter), and vanilla extract. Stir with the fork until a smooth, thick batter forms.
  3. If using, fold in the chocolate chips.
  4. Place the mug in the center of the microwave. Cook on high for 1 minute and 30 seconds, checking at 1 minute 15 seconds. The cake is done when the top looks set and dry and has pulled slightly from the mug’s edges.
  5. Let the mug cake sit for 60-90 seconds before eating, as it will be very hot.

Notes

Microwave powers vary. If the cake looks wet after 1:30, cook in 10-second bursts until done. Overcooking makes it tough. Ensure your mug holds at least 12 ounces to prevent overflow.
