These are the ultimate easy, crowd-pleasing dessert. With a creamy peanut butter base and a rich chocolate topping, they come together in minutes with no oven required.

  • 1 cup (250g) creamy peanut butter (standard, no-stir variety)
  • 1/2 cup (115g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 pinch fine sea salt
  • 1 1/2 cups (270g) semi-sweet chocolate chips
  • 1/4 cup (60g) creamy peanut butter

Instructions

  1. Line an 8×8 inch baking dish with parchment paper, leaving overhang on two sides to form a sling.
  2. In a large bowl, beat 1 cup peanut butter and the softened butter together until smooth and creamy.
  3. Mix in the vanilla extract and pinch of salt.
  4. Gradually add the powdered sugar, mixing until a thick, moldable dough forms.
  5. Press the peanut butter mixture firmly and evenly into the prepared pan.
  6. In a microwave-safe bowl, combine the chocolate chips and 1/4 cup peanut butter. Microwave in 30-second bursts, stirring after each, until completely smooth.
  7. Pour the melted chocolate mixture over the peanut butter layer and spread evenly.
  8. Refrigerate for at least 2 hours, or until completely set.
  9. Use the parchment paper to lift the block from the pan. Cut into squares with a sharp knife.

Notes

For clean cuts, wipe the knife with a warm towel between slices. Store in an airtight container in the fridge for up to 2 weeks. For a dairy-free version, use plant-based butter and dairy-free chocolate chips.
