Individual pots of creamy, classic cheesecake with a graham cracker crust, all made without turning on the oven. Perfect for quick weeknight treats or easy entertaining with minimal hands-on time.

  • 1 1/2 cups graham cracker crumbs (about 10 full sheets)
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • A tiny pinch of salt
  • For the Filling:
  • 8 ounces (one block) full-fat cream cheese, softened to room temperature
  • 1 cup powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream, cold

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and salt. Mix until crumbs are evenly moistened.
  2. Divide mixture evenly among 6-8 small cups or ramekins. Press firmly into an even layer using the bottom of a glass or spoon.
  3. Make the filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 1-2 minutes.
  4. Add the sifted powdered sugar and vanilla extract to the cream cheese. Beat on low, then medium, until fully incorporated and smooth.
  5. Whip the cream: In a separate clean, chilled bowl, beat the cold heavy whipping cream on medium-high speed until stiff peaks form.
  6. Combine: Gently fold about one-third of the whipped cream into the cream cheese mixture to lighten it. Then carefully fold in the remaining whipped cream until no white streaks remain.
  7. Assemble: Spoon or pipe the filling over the prepared crusts in each cup. Smooth the tops.
  8. Chill: Cover and refrigerate the cheesecake cups for at least 4 hours, or overnight for best results, until fully set.

Notes

Ensure cream cheese is fully softened to avoid lumps. Do not skip the full chill time for proper setting. For variations, try an Oreo crust, swirl in fruit preserves, or top with fresh berries, chocolate sauce, or whipped cream before serving.
