These are a fun, protein-packed appetizer that feels like a treat, not a compromise. The hasselback technique creates crispy edges and pockets for a tangy-sweet mustard glaze to caramelize. They are perfect for parties, game day, or as a quick, impressive snack.

  • 1 (14-16 ounce) ring of Polska kielbasa or smoked sausage
  • 1/4 cup Dijon mustard
  • 2 tablespoons pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Freshly cracked black pepper, to taste
  • Optional for garnish: chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the kielbasa dry with a paper towel. Place it on a cutting board with two chopsticks or wooden spoons parallel along its sides as guards.
  3. Using a sharp knife, make cuts about 1/4-inch apart along the entire length of the sausage, stopping when the knife hits the chopsticks to avoid cutting through.
  4. In a small bowl, whisk together the Dijon mustard, maple syrup, apple cider vinegar, olive oil, smoked paprika, and garlic powder until smooth.
  5. Place the scored kielbasa on the prepared baking sheet. Brush about two-thirds of the mustard glaze generously over the entire sausage, getting it into the cuts. Reserve the remaining glaze.
  6. Bake for 20-25 minutes, until heated through, the edges are crisping, and the glaze is bubbly and caramelized.
  7. Remove from oven and let rest for 2-3 minutes. Slice into 1-inch thick rounds.
  8. Arrange bites on a platter, drizzle with reserved glaze, and garnish with parsley if using. Serve immediately.

Notes

Use chopsticks as guards to prevent slicing all the way through. Patting the sausage dry helps the glaze stick. For a spicier version, use andouille sausage or add cayenne to the glaze. Reheat leftovers in an air fryer or toaster oven to maintain crispness.
