These vibrant Mini Caprese Bites are the perfect easy appetizer for any gathering. With just fresh cherry tomatoes, mozzarella pearls, and basil, they come together in minutes and always impress guests.

Ingredients

  • 1 pint cherry tomatoes or grape tomatoes
  • 8 ounces fresh mozzarella pearls (or one large ball, cut into 1/2-inch cubes)
  • 1 bunch fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze or reduction
  • Flaky sea salt and freshly cracked black pepper, to taste
  • Optional: 24 small wooden skewers or cocktail picks

Instructions

  1. Prep Your Ingredients: If using a large ball of mozzarella, pat it dry with a paper towel and cut it into cubes roughly the same size as your tomatoes. Gently rinse and dry your cherry tomatoes and basil leaves.
  2. Assemble the Skewers: Take a skewer and thread one cherry tomato, followed by a small fold of basil leaf, and then one mozzarella pearl. Repeat the pattern: tomato, basil, mozzarella.
  3. Arrange and Season: Arrange all completed skewers on a serving platter. Drizzle generously with extra virgin olive oil.
  4. The Finishing Touches: Just before serving, drizzle the balsamic glaze in a zig-zag pattern over the bites. Finish with a light sprinkle of flaky sea salt and a grind of black pepper.

Notes

For best results, assemble within an hour of serving to prevent basil from wilting. You can prep all components ahead of time and assemble just before your event. Do not freeze these appetizers as the texture will be ruined.
