These are an easy, delicious appetizer that lets you do almost all the work ahead of time. The classic combination of tomato, mozzarella, and basil is presented in a fun, skewered form perfect for parties.

Ingredients

  • 20-24 cherry or grape tomatoes
  • 8 ounces fresh mozzarella balls (ciliegine or bocconcini)
  • 1 large handful fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Rinse and thoroughly dry the tomatoes and basil leaves. Pat the mozzarella balls dry with a paper towel.
  2. Thread one tomato onto a small skewer or toothpick. Add a folded basil leaf, then one mozzarella ball. Repeat with remaining ingredients.
  3. Arrange the skewered bites on a serving platter.
  4. Drizzle the bites generously with extra virgin olive oil.
  5. Zig-zag the balsamic glaze over the top.
  6. Just before serving, sprinkle with flaky sea salt and freshly cracked black pepper.

Notes

Assemble skewers up to 3 hours ahead; add oil, glaze, and salt right before serving. For a vegan version, use marinated tofu or vegan mozzarella. Ensure ingredients are dry to prevent a watery platter.
