These Mini Brie Bites are the ultimate easy appetizer, combining flaky puff pastry, creamy brie, and sweet fruit preserves. They bake in just 15 minutes for a warm, comforting, and crowd-pleasing snack perfect for any gathering.

  • 1 sheet frozen puff pastry, thawed (about 8-9 ounces)
  • 1 (8-ounce) wheel of brie cheese
  • ¼ cup fruit preserves (apricot, fig, or raspberry)
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves, plus more for garnish
  • 1 large egg, beaten (for egg wash)
  • Flaky sea salt, for finishing

Instructions

  1. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or lightly coat with non-stick spray.
  2. Unfold the thawed puff pastry on a lightly floured surface. Cut into 12 equal squares.
  3. Gently press each pastry square into a muffin cup, letting the corners point upwards to form a cup.
  4. Cut the brie wheel into 12 small chunks. Place one chunk into each pastry cup.
  5. Top each brie chunk with about 1 teaspoon of fruit preserves.
  6. Brush the exposed edges of the puff pastry with the beaten egg wash.
  7. Bake for 14-16 minutes, until the pastry is puffed and deeply golden.
  8. Remove from oven. Immediately drizzle with honey and sprinkle with fresh thyme and a pinch of flaky sea salt.
  9. Let cool in the pan for 2-3 minutes before serving warm.

Notes

For a savory twist, substitute the fruit preserves with pesto or pepper jelly. Ensure puff pastry is fully thawed but still cold for best results. Bites are best served fresh but can be assembled a day ahead and refrigerated before baking.
