A fast and flavorful weeknight dinner featuring salmon fillets with a sweet, tangy, and savory glaze. It comes together in under 20 minutes for a meal that feels special without the stress. Perfect served over creamy polenta or with a crisp salad.

  • 4 (6-ounce) salmon fillets, skin-on or skinless
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup honey
  • 3 tablespoons Dijon mustard
  • 2 tablespoons whole-grain mustard
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat oven to 400°F (200°C). Pat salmon fillets very dry with paper towels. Drizzle with olive oil and season both sides with salt and pepper.
  2. In a small bowl, whisk together honey, Dijon mustard, whole-grain mustard, soy sauce, minced garlic, and lemon juice to make the glaze.
  3. Heat a large oven-safe skillet over medium-high heat. Place salmon in the skillet, presentation-side down, and sear undisturbed for 2-3 minutes until a golden crust forms.
  4. Carefully flip the salmon fillets. Spoon about half of the glaze over the top of each piece, spreading to cover.
  5. Transfer the skillet to the preheated oven. Bake for 6-8 minutes, or until salmon flakes easily and reaches 125-130°F internally.
  6. Remove from oven and let salmon rest in the pan for 2-3 minutes. Drizzle with the remaining fresh glaze before serving.

Notes

For a lighter option, you can cook this in an air fryer at 400°F for 8-10 minutes, brushing with glaze in the last few minutes. Always pat the salmon dry before cooking to ensure a good sear. Do not add all the glaze before baking; reserve some for a fresh, bright finish.
