  • 4 (6-ounce) salmon fillets, skin-on or skinless
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper
  • 1/3 cup honey
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon minced fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Pat the salmon fillets completely dry with paper towels. Season both sides generously with salt and pepper.
  2. In a small bowl, whisk together the honey, soy sauce, lemon juice, minced garlic, ginger, and red pepper flakes (if using) until smooth. Set the glaze aside.
  3. Heat the olive oil in a large skillet over medium-high heat until shimmering. Carefully place the salmon fillets in the hot pan, presentation-side down. Cook undisturbed for 4-5 minutes to form a golden-brown crust.
  4. Gently flip the fillets. Reduce the heat to medium. Pour the prepared honey glaze mixture into the pan around the salmon. Let it bubble for 1 minute.
  5. Spoon the bubbling glaze over the top of the salmon fillets repeatedly for 3-4 minutes. The sauce will thicken and coat the fish. Cook until the salmon flakes easily with a fork.
  6. Transfer the salmon to a plate and let it rest for 2-3 minutes. Drizzle any remaining glaze from the pan over the top before serving.

Notes

For a perfect sear, ensure the salmon is very dry and the pan is properly hot before adding the fish. The salmon is done when it reaches an internal temperature of 125-130°F for medium. The glaze can be made up to 3 days in advance.
