These carrots are roasted at high heat to achieve a tender interior and beautifully caramelized, slightly crisp edges. The simple glaze of honey, garlic, and thyme creates a sweet and savory side dish that is both elegant and easy to make. Perfect for weeknight dinners or festive holiday meals.

Ingredients

  • 2 pounds fresh carrots, peeled and cut into uniform 2-inch sticks or coins
  • 3 tablespoons olive oil or melted butter
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Optional garnish: Fresh parsley or extra thyme

Instructions

  1. Preheat oven to 425°F (220°C). Line a large, rimmed baking sheet with parchment paper.
  2. In a large bowl, toss the carrot pieces with olive oil, honey, minced garlic, thyme, salt, and pepper until evenly coated.
  3. Spread the carrots in a single, uncrowded layer on the prepared baking sheet.
  4. Roast for 15 minutes, then remove from oven and toss the carrots with a spatula.
  5. Return to the oven and roast for another 10 to 15 minutes, until the carrots are fork-tender and the edges are caramelized.
  6. Transfer to a serving dish, garnish if desired, and serve warm.

Notes

The key to perfect caramelization is to not crowd the pan. Use two baking sheets if necessary. For a vegan version, use olive oil and substitute maple syrup for the honey. Leftovers reheat well in the oven to restore crispness.
