This Honey Garlic Chicken Stir Fry is a quick and delicious weeknight dinner that comes together in just 20 minutes. Tender chicken and crisp vegetables are coated in a sweet and savory sauce that the whole family will love.

  • 1.5 pounds boneless skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil or avocado oil
  • 3 cloves fresh garlic, minced
  • 1 red bell pepper, sliced thin
  • 1 cup broccoli florets
  • 1 medium carrot, julienned or sliced into matchsticks
  • 3 green onions, sliced for garnish
  • Sesame seeds for topping
  • 1/3 cup honey
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water

Instructions

  1. Prep all ingredients: chop vegetables and cut chicken into uniform pieces. Mix honey, soy sauce, rice vinegar, sesame oil, and grated ginger in a small bowl for the sauce. Set cornstarch slurry aside.
  2. Heat 1 tablespoon oil in a large wok or heavy skillet over high heat until shimmering. Add chicken pieces in a single layer, cooking in batches if needed. Cook undisturbed for 3 minutes until golden, then toss and cook 2 more minutes until cooked through. Remove chicken to a plate.
  3. Add remaining 1 tablespoon oil to the same pan. Add minced garlic and stir for 30 seconds until fragrant. Add bell pepper, broccoli, and carrot. Stir fry for about 3 minutes until vegetables are bright and slightly tender but still crisp.
  4. Return cooked chicken to the pan. Pour honey garlic sauce over everything and toss to coat. Stir cornstarch slurry, then add to the pan. Stir for 1 minute until sauce thickens and becomes glossy.
  5. Remove from heat. Sprinkle with sliced green onions and sesame seeds. Serve immediately over steamed rice or noodles.

Notes

For best results, have all ingredients prepped before starting to cook, as stir frying moves quickly. To make it gluten-free, use tamari or coconut aminos instead of soy sauce. For a lower sugar version, reduce honey to 1/4 cup and add a splash of orange juice.
