This Hobo Casserole is the ultimate easy ground beef and potato bake, a one-dish wonder born from practicality and perfected by flavor. It is pure, uncomplicated comfort food that asks for little but gives back so much warmth and satisfaction.

  • 1 ½ pounds lean ground beef (85/15)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (smoked or sweet)
  • 4-5 medium russet potatoes, peeled and thinly sliced (about ⅛-inch thick)
  • 1 (10.5 oz) can condensed cream of mushroom soup (or cream of chicken)
  • 1 cup milk (whole or 2%)
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 cup French fried onions (optional, for crunch)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, cook the ground beef with the diced onion until browned and the onion is soft. Add garlic, salt, pepper, and paprika; cook for one more minute. Drain excess fat.
  3. In a medium bowl, whisk together the condensed soup, milk, and sour cream until smooth.
  4. Grease a 9×13 inch baking dish. Arrange half of the sliced potatoes in an even layer on the bottom.
  5. Spread the cooked ground beef mixture over the potatoes. Sprinkle one cup of shredded cheddar cheese over the beef.
  6. Top with the remaining potato slices. Slowly pour the creamy soup mixture evenly over everything.
  7. Cover the dish tightly with aluminum foil and bake for 45 minutes.
  8. Remove the foil, sprinkle with the remaining 1 cup of cheese (and French fried onions if using).
  9. Return to the oven, uncovered, for 15-20 minutes, or until cheese is bubbly and golden and potatoes are tender.
  10. Let the casserole rest for 10 minutes before serving.

Notes

For best results, slice potatoes uniformly thin (⅛-inch) to ensure they cook through. Letting the casserole rest before serving allows the layers to set for cleaner slices. Ground turkey or a plant-based crumble can be substituted for the beef.
