  • 1 ½ pounds lean ground beef
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 4 medium russet potatoes, peeled and cubed
  • 3 large carrots, peeled and sliced
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 cup frozen green peas (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef and onion over medium-high heat until beef is browned. Drain excess grease. Add garlic and cook for 1 minute.
  3. Stir in cream of mushroom soup, beef broth, Worcestershire sauce, tomato paste, thyme, paprika, garlic powder, salt, and pepper. Simmer for 2-3 minutes.
  4. Gently fold in potatoes and carrots until coated in sauce. Transfer mixture to a 9×13 inch baking dish. Cover tightly with foil.
  5. Bake covered for 50 minutes.
  6. Remove foil. If using, stir in frozen peas. Bake uncovered for 10-15 more minutes until top is slightly browned.
  7. Garnish with fresh parsley before serving.

Notes

For gluten-free, use certified gluten-free cream soup and Worcestershire sauce. Vegetables can be swapped (e.g., sweet potatoes, green beans). Leftovers store well in the fridge for up to 4 days or freeze for 3 months.
